The Great British Baking Show embraced all things retro on this week’s new episode, “’80s Week.” The tent was abuzz with jokes about Sting and E.T. and the bakers had to recreate a few passé favorites like finger donuts, ice cream cake, and quiche. While donuts and ice cream cake are still fairly mainstream, you would be forgiven for not ever encountering the noble breakfast tart known as a quiche. But what is a quiche anyway?

I understand there are other things happening in the world today, but there is still a new episode of The Great British Baking Show for you to feast on! “’80s Week” is this season’s version of last year’s “Roaring ’20s Week,” except the recipes will feel a lot more familiar. I myself first encountered both the ice cream cake and quiche during the mid ’90s. My richer friends got ice cream cakes for their birthdays and my older sisters made me eat quiche one time after they saw it on TV.

But what is quiche? And where can you find quiche recipes online? Here’s everything you need to know about the Signature Challenge on this week’s all-new episode of The Great British Baking Show on Netflix…

WHAT IS QUICHE, THE SIGNATURE CHALLENGE ON THE GREAT BRITISH BAKING SHOW ’80S WEEK?

A quiche is a French pastry tart filled with (usually) egg custard and additional flavors and ingredients. The most famous quiche is a classic Quiche Lorraine which includes bacon and cheese, but you can put any combination of meet, vegetables, and seasoning in a quiche.

Quiche seems to have originated in the Lorrain area of France (which is close to Belgium) and was first mentioned in the States in 1925. However it only became popular in the States in the 1950s and would go on to become a party treat and brunch staple in the 1980s.

WHERE CAN I FIND A QUICHE RECIPE?

The New York Times has a fairly classic Quiche Lorraine recipe, but Julia Child is also famous for hers (which you can find on the official GBH website).

If you want more flexibility in flavors, TheKitchn has what they call a “Foolproof” guide to making quiches. They also recommend blind baking the pastry and give pretty handy ingredient ratios for more experimental bakers at home.
