This simple snack is a slightly fancier version of the time-honored practice of topping potato chips with sour cream and caviar. Here, the sour cream gets zipped up with scallions, chives and white pepper and the caviar — preferably bright orange beads of salmon roe — glow like jewels on top. One of the easiest hors d’oeuvres to put together, it’s also one of the most festive.

  • Celery sticks, for serving

Preparation

  1. Step 1

    In a small bowl, mix together sour cream, scallions, chives, pepper and salt to taste. Let sit at room temperature for at least 10 minutes so the flavors can meld (or chill for up to 24 hours before serving).

  2. Step 2

    Spoon caviar on top and serve with potato chips and celery sticks.

Cooking Notes

All of you with reservations about the caviar, feel free to send it all to me. Basically this seems like a potato chip version of caviar service--plain water crackers, sour cream, capers (salt and flavor now provided by the chips), a little mild onion flavor for those who like that, and as much caviar as the host will allow you to eat. As with smoked salmon and sour cream on potato chips, I will eat it until I'm sick.

I have always gently folded in the caviar, saving some to sprinkle on top. People devour this!

This was easy and fresh tasting compared to store bought dips. I liked the base dip but a little caviar went a long way for me. My kids and spouse seemed to feel the same. Go easy on the salt as caviar and chips are also salty. Black pepper worked fine too. :)

You will probably need to add some spice to this (some chili powder, etc), as I did. Felt it needed a kick.

Personally, I don't agree. The roe flavor is very delicate and and I won't do anything to cover it up. Also the reason why I won't buy salted roe.

I'm in Eastern Europe, where sturgeon caviar is king and salmon is tough to find, so I used that. It's ALSO tough to find chives and scallions, so I used the green and white of a green onion. No extra salt needed, this was delightful. Used up the jar of caviar I'd been holding on to and being overly precious about.

Oh lord. So delicious. Made just as the recipe said and served with kettle chips and it was just good. The dip alone was fine but with the salty pop of the salmon roe it was next level. Leftovers were even better. Perfect for our "fancy appetizers" New Year's Eve.

1. Delicious as is! 2. Half sour cream, half creme fraiche, and minced shallots in place of scallions, was also outstanding. 3. Fun to plop/swirl two colors of caviar! 4. Light on salt, because of caviar and potato chips. 5. Black pepper is fine.

Oh my. Why make the substitutions like the below (cream cheese, ketchup, chili powder)? Oh my.

I made this last year according to the recipe - delicious! This year I doubled it because it goes fast, added about 1/2 tsp of onion powder, and let the dip base sit overnight in the fridge - OUTSTANDING! Even without the onion powder it's worth it to make the dip base at least 12 hrs ahead to let the flavor develop. Add salt sparingly. This is a new holiday tradtion in our house with a bottle of nice champagne or dry vodka martinis.

We LOVE THIS! make it over and over for entertaining, or just for us to enjoy. Made it exactly as written. Next time mixed salmon roe into the dip and on top. Next time added more scallion/chives, a pinch of onion granules and a dash of sriracha: it’s perfect (for us!) We have many excellent Japanese groceries = plenty of fresh ikura (Japanese salmon roe… fabulous and less salty than caviar). Use high-end potato chip; makes a big diff: COSTCO Kirkland ripple chips w/pink Himalayan salt are #1

Jessie was 7 when Hansen played the H. Bowl, her 1st concert. Her dad, took her. They were back home 1/2 way thru. Jess' ears hurt--too loud. Her dad, crestfallen, got her a toy on way out. That was the story, for 20 years. Sensitive ears, possibly damaged. The real story? Going in, Jess saw Patti, & left the show for her true love, a platypus Beanie Baby, You have to admire ingenuity crossed w/desire, like this recipe. I use Ossetra & Toast Jessie. It's not Rock n Roll, but I like it!

I don’t believe that there is a shortage of salmon roe. The production of farmed salmon in the world is now over 2.6 million tons per year. Those salmon are producing a lot of roe.

I do a fun caviar plate once a year. It is extremely easy, and delicious. Chop up a couple of hard boiled eggs. Grate a bit of onion and add some melted butter. This will make the eggs harden. pat the egg mixture onto a plate. Spread about a half inch softened cream cheese to cover the eggs. Let that all set up. When ready to serve, spread caviar on top of the plate and then cover with sour cream. I have passed this on to my daughter, and we both get very excited to create it in the new year.

Hmmm. Dips in the age of viruses. Not sure I love the idea.

I loved this I also added lemon, some Worcestershire sauce, and hot sauce

Made this as part of our NYE spread. It was so delicious! I also added a tablespoon of finely chopped pickled shallots. Will definitely be making for future swanky gatherings!

Simple delicious luxurious, brilliant!

I served this in Christmas using 1/2 cream fraiche and 1/2 sour cream with whitefish caviar. The 4 of us practically licked the bowl clean. Such a fancy non-fancy dish. I will always serve this for parties (or even a random movie night).

Nice quick easy. In addition to a dip it is great dolloped on smoked salmon or scrambled eggs. Probably potatoes as well. Will make again.

We had some excellent champagne preceding a fancy multicourse dinner--this starter was demolished by our guests in 20 minutes, with the bowl scraped clean. Guests were a sophisticated lot who took note of this simple, yet elegant, dip. A hand-down winner with champagne.

Added just a teaspoon or so of lemon juice for brightness. Also mixed in the caviar and put more on top. It was devoured. A big hit.

Added a little bit of lemon juice, a little bit of chopped cilantro and a tiny bit of sriracha and omg - it’s dangerously good. Enjoy!
