Your Town Auburn: Roast and Toast goes from cozy café by day to chic cocktail bar by night

AUBURN, N.Y. — Café by day and cocktail bar by night, Roast and Toast is Auburn’s newest hot spot.

Auburn coffee company Simple Roast is expanding from its two drive-thru locations to its first brick-and-mortar store in the heart of downtown Auburn.

“We wanted it to feel comfortable and cozy and a really welcoming space for everybody to come in, to be a place to congregate and get together with your friends,” said owner Matt Peirson.

During the day, the spot serves up specialty coffees, yogurt bowls and an expansive toast menu. Its toast menu ranges from classic avocado toast to the more unique GCT, topped with goat cheese, prosciutto, arugula and hot honey.

The whole idea is that it's a very simple thing. Kind of goes in line with our brand, but it's very elevated and delicious and healthy.

All the toast is made with Heidelburg Bread sourdough made in Herkimer, New York and all the coffee is Simple Roast, roasted fresh every week.

In a fun twist, every Thursday, Friday and Saturday night, the coffee bar turns into a cocktail bar. It offers a seasonal cocktail menu and classic cocktails, such as a seasonal Espresso Martini and a Bees Knees.

Roast and Toast is open every day from 7:30 a.m. to 2 p.m. and re-opens 5-11 p.m. on Thursday through Saturday nights. For more information, click here.
