I generally think most of us fall into two categories: those of us who think nothing of whipping up fancy, tasty delights a la Martha Stewart when entertaining and those of us who get a deer-in-headlights look before grabbing a small crockpot, a store-bought powder of some sort, and adding cream cheese. I fall somewhere between both camps. I have rushed to Sam’s Club the morning of my third wedding to buy every pre-made appetizer they sold and I have spent two days fiddling with an assortment of beautiful canapés such that I only have time to quickly shower and greet my guests in a caftan with great food and wet hair when entertaining. Although I’m certain the former situation says more about my approach to matrimony than entertaining.
This wonderful new book puts us all in the same tent. The author does pretty much everything other than your grocery shopping. The emphasis is on delicious, unique, and easy-to-prepare foods. RECIPE: FRIED PEANUTS AND LIME LEAVES
2 teaspoons coriander seeds
1 teaspoon whole black peppercorns
2 teaspoons coarse sea salt
3 makrut lime leaves, sliced finely
Peanut or vegetable oil, for frying
2 ½ cups skin-on raw peanuts
Using a food processor or mortar and pestle, grind coriander, peppercorns, salt, and lime leaves. Transfer to a medium-size serving bowl. Heat oil (at least an inch deep) in a Dutch oven or saucepan to 365°F. Add half of the peanuts and cook, stirring frequently, until golden brown, about 2 minutes. Transfer peanuts to paper towels to drain. Repeat with remaining peanuts. Gently toss peanuts in the spice mixture until fully coated. Serve warm or at room temperature.
COCKTAIL PAIRING: HONEY-GINGER DAIQUIRI
2 ounces light rum
1 ounce fresh lime juice
1⁄2 ounce honey-ginger syrup
Ginger coin, for garnish (if desired)
Shake ingredients with ice and strain into a cocktail glass. Garnish with a lime wheel.
