Inspired by tandoori chicken, we coat carrots with a mixture of yogurt and spices, then roast them in a blisteringly hot oven. Braised Leeks with Balsamic Glaze

Leeks often play a supporting role but they have so much more to offer. We cut them into chunky sections and simmer them in a mix of olive oil and water until silky and tender in texture and rich and subdued in flavor. A syrupy, tangy-sweet reduction of balsamic vinegar is the perfect accent to the leeks’ oniony notes.

Thai Red Curry Squash Soup

We borrow the flavors from coconutty Thai red curry and turn them into a rich, luxurious vegetarian soup with sweet, earthy winter squash as the base. Spicy and savory with a balanced sweetness, the soup is topped with fried shallots, fresh herbs and lime zest that add inviting fragrance along with bold pops of color and flavor.

We roast slices of plum tomatoes to soften their texture and concentrate their flavors before layering them on top of creamy Taleggio cheese and toasted slices of bread. In an interesting twist, we opt for pumpernickel bread for making these tasty herb-garnished bruschette. The bruschette are so delicious, we think Italians would approve!

Spaghetti with Eggplant, Tomatoes and Gorgonzola

This version of a pasta dish we enjoyed in Naples can be on the table in well under an hour and requires only seven ingredients (not counting the olive oil). Fresh, high-impact ingredients make the recipe work—every element brings something to the table. The flavors will transport to you a trattoria in Italy. Buon appetito!

Grilled Corn with Za'atar Butter

Grilled corn is always a favorite. But when the ears are coated with a spiced butter and put back over the fire for a few minutes for flavorful charring, the iconic summer vegetable is elevated to another level. Za’atar, a Middle Eastern seed and spice blend, seasons the butter in one of our favorite grilled corn recipes, but we have three other tasty combos, too.

Christopher Kimball is the founder of Christopher Kimball’s Milk Street. Mr. Kimball is also the host of Christopher Kimball’s Milk Street Television and Christopher Kimball’s Milk Street Radio, a weekly public radio show (and podcast).

Christopher also founded Cook’s Magazine in 1980 and served as publisher and editorial director through 1989. In 1993, Mr. Kimball re-launched Cook’s Magazine as Cook’s Illustrated and went on to found Cook’s Country magazine in 2004. Mr. Kimball is the author of several books including, most recently, Fannie’s Last Supper.

Love this cookbook!
If you are into vegetables, this cookbook is AMAZING. Everything I’ve tried has been good. The table of contents is organized by vegetables (yay!), and there are pictures of every recipe. I rarely meet a vegetable I don’t like, so I am loving this cookbook. Note that not everything is vegetarian, but if you are looking to bump up your vege intake, this is a good one!

This book make my new vegan life trade off super easy, it’s been a week since the bought and I already made more than 5 recipes. They are thoroughly explained, nice pictures to have a point of reference, and most important, super yummy! Also thanks to the autor for the video trailer on the publish.

I was really looking forward to this when I saw it advertised on Facebook - I thought it would be just what I needed to be inspired to serve more vegetables. It's a big book and beautifully illustrated. But as I started to page through it, there were some ingredients I'd never even heard of and some of the preparation instructions were way over my head. Also lot's called for fresh ingredients -- which can be challenging to get. I wish there was a chapter on "cooking vegetables 101" the basics of how to buy, wash and keep them before you're ready to use them. If you LOVE to cook and experiment and learn new ideas -- and you're a VEGAN or think you should become one -- you'll probably enjoy this -- for me, it was just WAY OVER MY HEAD and skill level.

I needed another new cookbook to inspire me while at home during covid--and for tasty Lenten meals. Friends, this is THE Book! How many cookbooks contain recipes that you find appetizing, healthy, and don't involve complicated preps or loads of special equipment. May I recommend the Basque potato leek soup? It's a hit with everyone! The asparagus with pasta was great--and I simply cut out the half and half (lactose intolerant) and it still was spectacularly delicious. The asparagus and barley soup will be next! Ah! I love this cookbook so much that I am gifting it to others who will adore it.
PS When I made the asparagus and barley soup, eating it transported me into a fine dining experience in my own kitchen. I couldn't believe that a recipe that simple resulted in such a sophisticated and tasty dish!

He didn't teach us a dish; he teaches us the cuisine. Every dish, every recipe is Elite and could be featured on the menus of award winning restaurants around the world.

If you eat a lot of vegetables but don't know a lot of ways to prepare them, this is a great book for ideas. It is easy to follow with clear instructions. Worth the purchase.
