The Evolution of Dinner

The definition of what’s “dinner” has evolved over the past few decades. Gone is the romantic idea of sitting down at a candlelit table with others, passing around side dishes, and presenting an impressive main course that took hours to prepare. Those kinds of mealtime scenarios seem best for movies and for just a few special occasions throughout the year.

In this book, everything had to be wholesome, healthy, and vegetarian. Second, the number of ingredients had to be kept to a minimum, but not so stripped down that the ideas felt silly or basic. And lastly, they couldn’t take a long time to physically prepare.

These dinner recipes are delicious, and some are quite unusual. And many can be doubled or tripled to feed a crowd. A few use ingredients you may have never tried, such as nutritional yeast, which you’ll use to make our carrot risotto. A few use something common—like coffee—as a star ingredient in dishes to make something new, such as the Coffee-Rubbed Portobello Fajitas. And, yes, there are lots of options for vegans, those avoiding gluten, and a few for those dedicated to a keto-friendly lifestyle.

If I had to do a shout-out to my favorite recipe in this bunch, it’s hands down our healthy take on waffles. We loaded it up with good-for-you ingredients such as lentils, brown rice, and probiotic powder, and then we shared a tip about how to freeze leftovers and toast them up right out of the freezer. For me, when our waffle is crispy and hot, a spoonful of peanut butter and a little dollop of vanilla ice cream is all you need for a quick and incredible sweet sensation.

Hearty Soups

These recipes are versatile. I kinda think of it more like a GPS road map to the destination. Sure, you can follow step-by-step, but sometimes a little detour in ingredients can give you something even better. For example, if you have a few Parmesan cheese rinds in the fridge, toss them into the cauliflower chowder recipe! Leftover sweet potatoes? Chop ’em up and throw them into the chili. It’s all good.

All About Bread

If you can master one or two of these “scratch” bread recipes, your friends and family are going to think you’re a master chef. For a lot of people, the thought of turning something doughy into crispy, flaky, piping-hot bread seems like an impossible task. But it’s not: all you have to do is combine some wet ingredients and dry ingredients together and slather on some tasty ingredients to make anything from biscuits to rolls to cheese straws to pizza.

I am disappointed in the content of this book. Only a few recipes that would be exciting to try. Pictures are well done. Not much content for the price of the book. Was hoping the book would contain more of his input and hints like his program used to present.

Found the receipes boring -- too far out there and not classic dinner dishes. Great photos and some "okay" ideas but I think I know why it was on sale. I have looked at it twice since buying and now it is on a shelf collecting dust.
