An absolutely brilliant journey through India’s rich regional cuisines. I was thrilled to see many regions that don’t get as much attention covered here, and every recipe I’ve made has been a stunner. Maunika’s phulka roti recipe is the first I’ve ever gotten to consistently puff when cooking! I adore the huge variety of vegetarian options in here too. The recipes range from easy and quick to those that ask you to luxuriate in the process.(And please, please cook your onions exactly as long as she asks you to; properly caramelized and softened onions make these dishes sing!)

A beautifully presented book with good amount of recipes from all over India.
I especially liked the Appendices at the end of the book that gave information about regional Thalis and Menu Planning.
I am a very serious Indian cook, and I thought there could have been a bit more on herbs and spices. In particular pointing out that an Indian Bay leaf is not the same as a European Bay leaf. An Indian Bay leaf is actually a Cinnamon leaf and has a very different flavor to a plain Bay leaf. I know this is a bit "picky" but Maunika does use Tej Pata (Cinnamon leaves or Indian Bay leaves) in her cooking.
I am very much looking forward to cooking her recipes, and not just reading the book.

This is a very special cookbook: full of unusual recipes seldom found in others. Diverse Indian regional specialities are included. Recipes are clear and as straight-forward as possible. Some traditional Indian methods have been simplified but not at the risk to flavor and texture. I have a huge collection of the usual Indian cookbooks, and have used them for years, but have been thrilled to find this one: anyone seriously interested in Indian cuisine should buy it.

A very lovely and easy to follow book. A lot of new recipes for me and I've been making Indian food for 30 years. A nice selection from different states, I made a birthday Thali for my brother and used 6 of the recipes and will put them into our regular rotation. Ingredients were easily found at a local international supermarket.

Just received my copy of "Thali," and was relieved to see that the ingredients are also in cups and ounces, not just in grams and milliliters. This is something that might have been mentioned in the book description for U.S. sales, but then many of the reviews are from people in the U.K., where I believe the book was published. The recipes look promising, and I look forward to trying them right away!

I personally love maunikas recipes… Lots of typos in this book like frying onions for 45-50 mins in many recipes will leave you with carbon! May be they meant 4-5 minutes… They could have given a bit more background to the rich culture of these dishes… the book is great for beginners who are new to Indian food…

Explains well what spices you need to get, how to use them and combine into premade mix, and what equipment you need. A few recipes we tried already are all very tasty and full of flavour. And the result is a truelly authentic Indian meal! My husband and I were very excited to be able for the first time to follow the recipe and make an original tasty Indian dieshes! Highly recommend.
