Mediterranean Diet Plan 🇺🇸 on Instagram: "fresh orzo salad - 🫒🍅🥬 Cre by @eatwithbonnie_ 4 servings 250g of orzo (cooked ) 130g black pitted olives 8- 10 sundried tomatoes (chopped) 1/2 a cucumber (chopped) 70g cherry tomatoes (chopped) 50g rocket/ salad of your choice 1 tin butter beans (400g) 50g fresh basil (chopped) dressing: 70ml olive oil 1 lemon juiced 1 tsp dijon mustard 1 clove of garlic (crushed) method: cook your orzo in some boiling salted water drain and rinse once cooked. chop your veggies, combine your dressing ingredients together then throw everything into a large bowl and mix. this can be stored in the fridge for up to week. enjoy 🫒🍅🥬"
