Prepare the Vegetables: Chop all the peaches, tomatoes, onions, and peppers. You can use a food processor to make this step easier.2. Mix Ingredients: In a large bowl, combine the diced peaches, tomatoes, onions, and peppers. Add the lemon juice and mix well.3. Cook the Salsa: In a large saucepan, add the vegetable mixture along with the vinegar, salt, and minced garlic. Bring the mixture to a boil over medium-high heat. Recipe: 2 gallons of washed and rinsed Chokecherries 2 gallons of cold water 7 cups of sugar (for 8 cups of chokecherry juice) Juice of one lemon 3-4 pouches of liquid pectin Procedure: 1️⃣ In a medium sized pot add the chokecherries and water and bring to a boil for at least 30 minutes. 2️⃣ Let cool and place the chokecherries and water in a food mill and extract the most liquid from the chokecherries as possible. Add the chokecherries and water through the mill. 3️⃣ Strain through a cheesecloth into another pot and add the sugar and lemon juice. Bring to a rolling boil before adding the pectin, start with 3 pouches of pectin and stir quickly being careful not to burn yourself. If too thin add the fourth pouch and check for thickness. Let cool and ladle the foam or impurities that settle on top. 4️⃣ Add to sterilized jars leaving an inch from the top, placed the sterilized tops and lids finger tight and place in boiling water with enough water to cover them and boil for 20 minutes. Remove the jars and let cool/set overnight.
