I made @wishbonekitchen’s Lemon Arugula orzo to go with this and it’s absolutely in my recipe rotation from now on You can use whatever vinegar you like, just make sure to add something to bind the oil and vinegar together. I used dijon in this recipe, but it’s also delicious with mayo. I like to season mine with honey (optional), salt, pepper, grated garlic and Italian seasoning, but a touch of parmesan and shallot would be delicious as well. Lucija on Instagram: "Smashed cucumber and potsticker salad 🤤 10 minute filling lunch that I just can’t get enough of Sauce: 3 tbsp low sodium soy sauce 1 tbsp chili oil 1/2 tbsp black soy sauce 1/2 tsp rice vinegar 1 tsp brown sugar 1/2 tbsp sesame seeds 1 English cucumber 12 potstickers •Cook your potstickers according to packaging instructions. Set aside to cool slightly •Cut the ends from the cucumber and smash with a meat tenderizer a few times. Cut into smaller pieces if necessary. Place cucumber pieces in a bowl and add a big pinch of salt.
