Mash the raspberries with a fork until they form a paste. 2. Line a baking sheet with parchment paper. Spoon the raspberry mixture onto the sheet, flattening them into disc shapes. Freeze for about an hour until solid. 3. In separate microwave-safe bowl, melt the dark chocolate bar with half of the coconut oil each. Microwave for 30 seconds, stir, then microwave for an additional 30 seconds until fully melted. 4. Dip the frozen raspberry discs into the melted chocolate, coating them evenly. 5. Return the dipped discs to the freezer and let them harden for 30 minutes. Enjoy immediately or store for later! Made this for our first supper club and it was such a hit! I used all of @giadadelaurentiis recipes but this one was my favorite! 1 cup raspberry jam (I used homemade) 6 tbsp orange liquor 1 lb mascarpone cheese, room temp 1 cup whipping cream 1/4 cup sugar 1 tsp pure vanilla 12 oz pound cake or ladyfingers 3 1/2 pint fresh raspberries Stir the jam and 4 tablespoons of the orange liqueur in a small bowl to blend. Combine the mascarpone and remaining 2 tablespoons of orange liqueur in a large bowl to blend. Using an electric mixer, beat the cream, sugar, and vanilla in another large bowl until soft peaks form. Using a large rubber spatula, stir 1/4 of the whipped cream into the mascarpone mixture to lighten. Fold the remaining whipped cream into the mascarpone mixture. Line the bottom of a 13 by 9 by 2-inch baking dish or other decorative serving dish with half of the pound cake. I opted to use a loaf pan for a taller cake. Spread half of the jam mixture over the pound cake. Spread half of the mascarpone mixture over the jam mixture, then cover with half of the fresh raspberries. Repeat layering with the remaining pound cake, jam mixture, mascarpone mixture and raspberries. Cover and refrigerate at least 3 hours or overnight.
