Ingredients
Produce
• 1 Chinese or japanese eggplant
• 5 Garlic cloves
• 1 1- inch piece Ginger
• 2 Lemongrass stalks, fresh
• 1 Red bell pepper, medium or large
• 1 Red chile peppers, mild
• 1 cup Thai basil, leaves
Refrigerated
• 1 (14-ounce/400g) block of firm or extra firm tofu
Canned Goods
• 1 batch Thai green curry paste, Homemade
• 4 tbsp Thai green curry paste, canned
• 1 cup Vegetable broth
Condiments
• 1 Lime juice, Freshly squeezed
• 1 1/2 tbsp Soy sauce
Pasta & Grains
• 5 Jasmine white rice or brown rice to serve, Cooked
Baking & Spices
• 1 tbsp Coconut sugar or brown sugar
• 1 tbsp Kosher salt
Other
• 8 Fresh makrut (kaffir) lime leaves, (bruised or crushed with your hands (note 5))
• 1.5 OR 2 (13.5-oz/400 mL) cans of full-fat coconut milk ((Note 4) )
