Ingredients

• 400 g Chicken thighs, Boneless
Produce
• 2 Bay leaves
• 1 Bok choy
• 40 G or 1 small onion or a couple of shallots
• 2 cloves Garlic
• 1 tsp Ginger
• 1/2 cup Shallots, Fried
• 1 cup Soaking water of dried mushrooms
Refrigerated
• 4 Hardboiled eggs
Condiments
• 3 tbsp Soy sauce, Light
• 1 tbsp Soy sauce, Dark
Baking & Spices
• 1 tsp Chinese five spice powder
• 1 Cinnamon stick
• 1 tbsp Rock sugar
• 2 Star anise
• 1/2 tsp White pepper, Ground
Oils & Vinegars
• 1 tbsp Cooking oil
Liquids
• 2 cups Water
Other
• 20 G or 5-6 dried shiitake mushrooms, rehydrated and diced
• 1 block Firm tofu or tau kwa
• Marinated with 1 tbsp Dark Soy Sauce
