This prawn salad is a beauty to share. It has all the best summertime favourites of avocado and mango. It's easy and ever so retro tropical.

Ingredients

Seafood

• 1 kg Prawns, cooked

Produce

• 3 Avocados, whole

• 2 Baby cos lettuce

• 2 tbsp Coriander, ROOTS and stems

• 2 tbsp Coriander, Leaves

• 1 clove Garlic

• 200 g Lenbanese cucumber

• 1/2 Lettuce

• 500 g Mango

• 50 g Peanuts, roasted and unsalted dry

• 50 g Rocket

• 50 g Spanish onion, fine cut

• 1 kg Tomatoes, firm but ripe

Condiments

• 1 tbsp Fish sauce

• 150 ml Lemon juice

Baking & Spices

• 1/4 tsp Salt

• 2 tbsp Sugar
