Mrs. Mollie Tadlock’s caramel cake icing and whiteLily batter makes for a good cake to go with my black coffee. Let’s see it we can make it. This is my... | By Cooking with Brenda Gantt | Happy Valentine's Day everybody. Listen, I want to show you this pretty apron that I got with the heart on it and I wanted to show you this pretty apron I got. With hearts all over it and then this one, it's got a big heart on it and I have another one that's y'all gave me um and I can't find it. I don't know if it's in the dirty clothes. I don't know where it is but I just had it the other day but that man that came from CCB Bank. He had it on. It's that April and it's got hearts on it. So, anyway, thank you and the cards, oh y'all, listen, y'all outdid yourself. I had some that were new bought cards. I had some that were antique cards that you've kept for years or that your mother had em and you sent me some of those. I had just all kinds and some of them were homemade cards that were beautiful. So, I had a big variety and I've had such a wonderful uh Valentine's looking at uh a time looking at all the Valentine cards that I am gonna cycle and add them to my collection. Y'all today, we are going to do a recipe. You can make any kind of cake you want to. A white cake, yellow cake, or whatever and if you don't know how to do that, go back on my videos til you find the sour cream coconut cake and that batter that I made that out of, you can make your butter the same way. I'm just gonna take time today. There they are. I'm not gonna take time today to go over how to make the batter. We're just gonna focus on this icing. Now, let me tell you about this icing. There was a lady in our church at Bethany Baptist Church and her name was Molly Tadlock and she used to pray that uh we would have lots of young people to come to our church. That was her prayer. It was always her prayer and sure enough, god answers that prayer. Y'all we've got so many young people and we've got babies. They're just they're just having babies coming and going in. It is so exciting. Our nursery's full and we've just got some beautiful children at Bethany. God has really blessed us but anyway, miss Molly, this is her recipe. And it's caramel icing cake or caramel icing that we're gonna put on the cake and you know, this is hard to make it. I don't know if I can make it today but I'm gonna give it a whirl and I wanna thank Beth Wilks for giving me this recipe. Uh she told me that she had it. She said, Brittany, yeah, I'd love to give it to you. So, I called her 1 day and she gave me the recipe and miss Molly had written it or she had, somebody had, I guess miss Molly did on the back of a church bulletin and Beth still has that same recipe on the back of church bulletin. Now, she told me one time, Beth did that she tried to double this recipe and it did not work and she said, I don't know what I did wrong when I doubled it. But she said, my icing ran everywhere but you know what? I bet it was still good. So, here we go. We're gonna try it and I've gotta go right by this cuz she said I would mess it up if I didn't. So, here we go. And it says, in a big, thick, bottomed boiler which I've got, thick-bottom boiler, brown one-fourth cup of sugar. Stirring constantly until caramelized. So, I'm gonna put a fourth of cup in there. Let me see if I got it right here. Let me put it in there. Til it get. I know this is a liquid measure y'all. I know. I wanna make sure I'm doing it right. Okay. That's one fourth cup. So, I'm gonna turn it on. And I told me to stir it constantly. Til it caramelized. That means kinda turn brownish color. Start to caramelized. Okay. Then, we are going to add our butter. Until it melts. I'm gonna read y'all all the ingredients when we get through but right now, I'm just read the directions. Anyway, those cards were so pretty and my mailbox has been full every day. It's just y'all are too good to. I wonder what you're gonna do on Halloween. If you've got a honey, uh y'all can go out to eat or you can fix a little romantic evening at home with the two of you and get your card table out. Have a tiny table and put your candle in the middle of it and use your fine China if you've got any. Um have a cloth napkin. Maybe put a flower in the middle and for goodness sake, look good. Look as good as you can. And uh so and have that little Valentine's Day that'll be great Okay, it's not, it's beginning to do a little bit right here. I'm gonna turn it down some. She didn't tell me what time to turn it. She just says stir it constantly so I'm gonna do that. Hasn't caramelized yet. Y'all come look in the pot. It's getting kinda wet though in it. See how it's kinda getting wet. I'm gonna keep stirring it. As best I can. They say that the ice is headed even south. Alright, y'all it's beginning to melt. I'm gonna turn it down soon. I'm kinda scared I'm gonna mess it up. Beginning to turn a little bit brown. So, um they say the ice is coming our way and I hear that it's already your way. If you're in the north, I'm I'm telling you, I've got a lot of I've got a lot of followers from Illinois and they said it was really tough there and I've got some from Canada. They said it was awful. See how that turned in a little bit on the brown side. Can you see that caramel forming right there? I can't pick this up again for y'all to look in the pot. You just gonna have to trust me. Alright. I'm gonna move it off for a second. Turn it kinda lower. If this messes up, I'll just put chocolate icing on it for Valentine's and I'll try this another time. But I want to try it because of it being an old recipe and because of whose it is. It's not all melted like I think it should. This looks kinda got me. She told me to put it in a deep pot because when we when we add our evaporated milk, she said it would bubble up real high. And that's why we have to have it in this type pot. It still has it all melted though. I'm shocked at that. I am gonna let you look cuz I want you to see what I'm dealing with. See that? See, it's melting but it's uh and it's turning brown. So, maybe that's maybe that's a good sign. Come on now and caramelized. Caramelized. I guess you'd say it's to the caramelized caramelized. It's still great today. I'm telling you it is rain. I can't get over it. I cannot get over it. Looks like it's about ready. I mean, it's it's really brown. Let it do just a little bit more cuz I really want that caramel flavor. What's the use of doing it if we're not gonna get a good caramel flavor. Right. I think that's about about there. See what I'm saying? Can you see down in there? That brown how it's turning the sugar. Kind of a brown caramel color. There you go. It's been a bad hair day all week. We just have to kinda pull it up the best way we know how. It's freezing everywhere. Okay, I think it's getting, I think it's brown enough. I don't know that for a fact. I just guess it's I bet when I get through with this and I bet when I put it on Facebook, y'all will be riding in and telling me what I did wrong or what I did right because I bet some of you do know how to make this caramelized it and this is my first time. I've never had a recipe before. I had a lady the other day to send me. Well, two of them actually. They sent me two really super old recipe books. I bet it's in that but I hadn't looked yet. Okay. Now, I'm supposed to put in my butter it says. One and a four sticks of butter. And let that melt. I'm gonna cut it up a little bit. Okay. When they, alright, let me read what else it says. Let's I know y'all are tired of me moving this thing. Alright, what it says? Okay. Stirring constantly. I'm stirring. I'm stirring y'all. I'm stirring. Okay. Um until caramelized. Okay, add butter until melted and add one cup of sugar in this mix well. Alright, and my butter's not quite melted yet. Stirring constantly. I'm stirring. I'm stirring you. Took it off the eye. I believe it's getting too hot. Add butter until melted. Then, add one cup of sugar mix well. Alright, here's one cup of sugar. I'm gonna mix that well with it. Alright. I don't know if you could do this without a good spatula. I'm telling you. Seems like on one side of my pot, it won't stick just a little bit. I don't know why. It seems like it. Alright, let's see what we're gonna do now. Add butter until melted. Add one cup of sugar. Okay. Mix well while I'm melted. Then, we're going to add our evaporated milk. And that would be evaporated three fourths cup of evaporated milk and I've already measured it out cuz I knew I'd be in a panic over here. And she said it would boil and bubble up as soon as it did. So, here we go. We're going to add our evaporated milk Oh, it didn't bubble up. What is she saying? Alright, Beth Wilts, I'm trying girl. And miss Molly Tadlock, if you're looking for heaven, you need to help me out a little bit. Alright, now stir it again. And when we add the evaporated milk, we are uh It's gonna bumble up. It's what it says which it didn't but anyway, stir and bring to a mold. Add the remaining sugar. Alright, we're gonna stir it. Bring it to a bowl. I wonder if a whisk would be better for this. I don't know. We have to see. Some stick it. It's almost like it's turned the the sugar has turned to candy. I don't think this is doing y'all. I might have to try it again another day. See what I'm doing wrong. I need miss Molly here showing me how to do it, don't I? And I also what I also need is I need to use this spoon right here if I can find it. I'm gonna not go quit stirring while I'm looking for it. Um I probably need to use this roux spoon. Let's try that. Bubbling up y'all. Add evaporated milk and bring to a bowl. Add remaining sugar and boil. Alright, let's add the remaining sugar. And boil until a soft boil formed in a cup of tap water. Alright, I got already got my water over here and and everything right here it is. We'll put it out close. Until they Come over here and look in here and see what I'm dealing with. Boil it. Let me get a little tiny spoon. We might need that. So, we can make a bowl of a bowl in this tap water. I've done, I've made a bowl of balls in the top of tap water before. You just put your water in there. We're gonna drop a ball, a little bitty a bit in there and you kinda swirl it around with your finger until it makes a soft boil I wish they had some um times on this thing but there's not any. There there are no times on it. You just gotta do til it does whatever. Alright, what I'm gonna do now is I am going to see if I mold it enough. I'm gonna take out just a little bit like that and I'm gonna drop it in this cold water and I'm gonna do it with my fingers. And it is not ready. I don't see AA ball throwing it out. This is turning into beef. A long video in it. Let me tell y'all a story while we're serving. When I was in college, I was dating George and Valentine's was cute was about here. We just had one little drugstore in Livingston, Alabama and they had a big variety of uh Valentine's candy. You know, in beautiful heart boxes. Well, one of the boxes was huge. I mean, it was like that big with this giant big Valentine. The biggest one the store had. So, that's the one George wanted to get for me. But the it was expensive. Yours didn't have a bunch of money. So, the man wouldn't come down on the price. So all the girls wanted that that big Valentine box of candy and their boyfriends hadn't bought it for them either so low and behold George went back in the afternoon right before Valentine's for the next day or either on Valentine's I don't remember if it was the day before or the actual day but the candy was still there the big box and he told that man he said you know what you're gonna get stuck with that big you're gonna get stuck with that big heart and you're gonna be able to sell it after Valentine's and so the man thought about it a while and he sold it for to George I think for half price. And uh so that's what I got and uh I was so excited. It was beautiful. Well, it wound up that my mama. I know y'all are tired of hearing this. My mama got the box. I'm gonna try it again. She got the box and for years, she used that box on her front door as a as a decoration for It's not forming a soft ball yet, y'all. Let me show you. I got I put it in the water. I don't guess that's what you consider a softball ball. Softball is hard to say. Anyway, yeah, I'm gonna cook it just a tad longer cuz that doesn't seem a little too soft to me. When I drop it in the water, then you, that cools it, then you can try it. We're supposed to put it on our cake on a cold cake but while the ice is still a little warm. That's what it says. So, we'll try it. It might not look pretty but I bet it still taste good. Alright, I'm gonna try it again. We'll put drop a little bit in here. Not much. Just uh just a little. I'm gonna take my finger and try to rake it around into a bowl. Take it out. Looks about like the other one did. I don't think it's ready. Cook it just about maybe another minute. It's getting there though. See that? See that little ball shape? Oh, you know, it's kinda Alright, let's see what we're supposed to do next. Let me read it. Alright, when the when the bowl until a soft boil formed in a cup of tap water. Remove from the heat and bake in your powdered sugar and add vanilla. Bake until it is smooth and easy to spread on the layers of the cake. Um the the cake that has been cooled and spread it while it is a little warm. I'm gonna say it's done. Now, I don't know that but I'm gonna say that it is cuz I I'm gonna drop it one more time and I'm gonna see. I think it's ready. Uh I mean, you know, it that see there. See how how it did. Okay, so let's see what we're gonna drop in it now. We're gonna take it off the heat, it said. Take it off the heat. And add our powdered sugar. I think when I do this, I'm gonna do it with a whisk so it can make it real smooth and that powdered sugar, I'll tell you how much is in that. That was uh a third of a cup. You probably need to do this in electric mixture. That's what it says but I think this whisk is gonna be fine. It looks pretty smooth to me. Okay, after we beat in the powdered sugar and it says with an electric mixer but I'm not gonna do it that way. Add vanilla. Alright, here we go. And the vanilla is um let's see how much vanilla I've got in here. One and a half teaspoons. Okay. Go rid of the vanilla. There we go. Let's see if we can put it on our cake. I'm gonna take y'all over here and we'll try to do this cake. If it's not stuck to my thing, I'm telling you, this hadn't been my day, has it? But that's alright. Alright, here's our caramel icing. I am going to get my a back of a spoon to do my spreading and I've got my cake right here. And I'm gonna get me some decisive out. And we'll put it on there. I said put it on while it's still warm. So, that's exactly what I'm gonna do. It pulled off surfed it. I know when I do this kind of thing, I've heard y'all say that you try to help me. I can see your hand going right now. You're trying to help me put it on, aren't you? Come on now, baby. Don't do that. Alright, there we go. We're gonna let that be layer number one. Now, we're getting a spatula and I'm gonna put on. Looks like we need a little bit right here, don't it? She told me it would not be enough to go down the side. So, that's what Beth told me. And I think that's why she was trying to make two recipes at one time and that she said that did not work. Alright, we're gonna put another piece of cake on it, another layer. Let's pour some icing on it. Just spread it around with more of a spatula or something. See if that'll help do it a little better. We're in the experimenting stage, aren't we? I love for things to be beautiful and look good but you know, sometimes it just doesn't work out that way. We just might have it to taste good. I believe this to do it much better than the back of that spoon. Alright, that is pretty. Okay. I spoke too soon, didn't I? Get over there. Okay? Now, we'll put on the other cake. And I will put the remainder of the icing on it. And then, I'm gonna tell y'all how it's gonna taste. We might have enough to go down part of the side. I can see why she's saying to spread it while it's still warm. Miss Molly was a mighty fine lady. I remember one time she came over to our house and uh we were trying to do a church directory and she and uh some friends of hers. Her Molly's husband's name was Dave and uh they came over here with Sieb and Jesse Hobbs to our house and told us all the history they could remember. Whoo. About um the turd. They do. We'll get that off too. I mean, I wanna use it. If we made it, we wanna use it, don't we? I think that if I made this again, I would do better the next time, don't y'all? I hope so anyway. I need to heat this back up and get an apple out and make me a caramel apple. I'm gonna spread this little bit of last I got left on here. I can see where she's saying to do it while it's cool because if it ever gets, I mean, warm because if it ever gets cool, it's not gonna spread at all but I'm gonna take these skewers right here and I'm gonna put it next to the cake like that and break it off the height of the cake and stick it in so that my cake won't fall apart. That that way to go through all three layers. I like to do it this way but you do it anyway you see fit. It's your house, it's your kitchen, and it's your cake. Okay. There we go. And I know it's not beautiful but you know what? I believe it's gonna taste good. I've got my coffee ready. I've already put my coffee in the filter. I have um got my water in it. All I gotta do is press the button and I might have me some cake and everything this afternoon. Happy Valentine's Day. I'm gonna show y'all a another um maybe I'll get to it tomorrow. Um I'm gonna show you another um icing and it's my mother's icing and it's for chocolate. It's chocolate icing. It's real good and uh I'll show you that. I bet y'all gonna have to let this more soak. This stuff's getting harder and harder. But it has real good flavor. Talk to y'all later. Happy Valentine's Day dear hearts. Buh bye.
