I made a batch of quinoa and lentils yesterday and threw them in the fridge overnight. Today I added them to some cucumbers, tomatoes, scallions, chick peas and lots of fresh herbs and tossed it all with a flavorful dressing. This is the type of salad that gets better as it sits. It’s perfect on its own, or tossed with some pulled rotisserie chicken or tuna. It’s a great side for a steak or grilled chicken or how about hollowing out an avocado and stuffing it with this salad. These are trending everywhere online with people making them in the oven so here is my own air fried version. (This is a treat they are not healthy lol) Ingredients - 5- 6 x potatoes 🥔 - 70g butter 🧈 - 75g Parmesan 🧀 in total - 1 tsp paprika - 1 tsp garlic 🧄 - Salt and pepper - Fresh Rosemary 🍃 Method 1. Cut your potatoes in half then criss cross but don’t cut all the way 2. Melt 70g of butter in the microwave or saucepan 3. It’s crispy, creamy and the lemon juice gives it that Summer feel. Ingredients - 750g baby potatoes - 200g bacon lardons (can be pre-cooked bacon) - 2 tbsp olive oil - 5 tbsp Greek yoghurt - 2 tbsp light mayo - 1 tsp Dijon mustard - Juice of ½ lemon - Salt and pepper - Garlic (optional) - Chives - Parsley Method: 1. Boil your baby potatoes for 30 minutes (or until tender) 2. Line your air fryer with some parchment paper and set your boiled baby potatoes on top. Drain, dry and add corn starch, Parmesan cheese, garlic salt, paprika, salt and oil. Add to air fryer. 380 for 18 minutes, shake, and 400 for 5 minutes.
