You can get even browning and a perfectly-cooked interior by first salting it heavily; letting it sit for an hour; then putting it in a 275 oven until the internal temperature reaches about 90-95 degrees Fahrenheit.

Once you throw that on the grill, heed the advice of reigning BBQ expert @MeatheadGoldwyn: don’t create grill marks, rotate your steak for even browning. Those “woefully gray” diamond-shaped patches between them are, in his words, “unfulfilled potential.”

Don’t knock it ‘til you try it! I based this recipe off of my greek yogurt fudge (that recipe is back on my @lilsipper page), but of course this time I’m using cottage cheese. I used 100%
unsweetened pure chocolate which has no sugar or sugar alcohols - but if you are not used to a sugar free diet, of course you can use sweetened chocolate.

Ingredients:
1 1/2 cups cottage cheese
1/2 cup melted chocolate *see note above for what I used
