I love this green garlic because unlike growing whole garlic bulbs, which need months, and space and sunlight, you can have fresh green garlic in just a couple of weeks. There is a full reel on growing green garlic on my page ‘how to grow green garlic’ but it’s very simple. Peel the cloves - this is two bulbs - and pack them in a little dish. Pour water over and change the water everyday. Harvest your garlic as a when you want it, it will regrow several times before the bulbs are tired and ready to go in the compost. I use them to make these super simple flatbreads, as well as in omelettes, green garlic mayo and to add to soups, pasta dishes and risotto. flatbreads:At its simplest you can make the flatbreads with just two ingredients - Equal weight self raising flour and plain yoghurt. Then the olive oil is optional, just a splash. Salt is a must. Make as much dough as you need. These days I do it by eye. Chop the greens and add them to the dough. Cook the breads for a few minutes each side in a hot pan. Make a garlic butter by adding more greens to the bubbling butter. Eaten here with a dal which uses lentil greens also grown on my windowsill.
