Green or Red Grapes, keep whole or cut into halves  • 2 Apples, chopped into cubes (can sub with mango, pineapple, or mandarin oranges to keep it a true summer fruit salad.)  • 2 C. This healthy thanksgiving dressing is completely grain and gluten free! It’s made southern style with a gluten free giblet style gravy!

Ingredients:
 • For the Grain Free Thanksgiving Dressing:
 • 1 Batch of my Paleo Cornbread
 • 3 Pieces of Any Grain Free Bread, toasted (you can use any type of regular gluten free bread too)
 • 3 Chicken Thighs
 • 1 C. Green Bell Pepper, de-seeded & chopped
 • 1 C. Yellow Onion, diced
 • 1 C. Celery, finely chopped
 • 2 Tbsp Grass-fed Ghee, Avocado Oil, or Virgin Coconut Oil
 • 4 C. Chicken Broth
 • 2 Tbsp Dried Sage
 • 1 tsp Dried Thyme
 • 2 tsp Sea Salt
 • Black Pepper, to taste
 • 2 Egg, whisked

Directions:
 • Thanksgiving Dressing (Prep the Night Before):

Ingredients:
 • For the Crust:
 • 2 Eggs
 • 1/3 C. Grass-fed Ghee or Butter (softened (can also use coconut oil))
 • 1 C. Almond Flour
 • 1 Tbsp Powdered Sweetener (I used Birch Xylitol (see notes below))
 • Pinch of Sea Salt or Himalayan Rock Salt
 • For the Pumpkin Pie Filling:
 • 2 Eggs
 • 15 oz Organic Pumpkin Puree
 • 1 C. Full-Fat Coconut Milk from the can
 • 1/3 C. Granulated Sweetener (you can use any type of sweetener for this, pure cane sugar, monk fruit, xylitol, etc.)
 • 1 Tbsp Pumpkin Pie Spice (can add more, if desired)
 • 1/2 tsp Vanilla Extract
 • Pinch of Sea Salt or Himalayan R
