I had a half a jar of pesto sitting in the fridge that I needed to use and I’m so glad I added it to this vinaigrette! 🌿 Creamy Pesto Vinaigrette: 1/2 cup olive oil 1/2 cup red wine vinegar 3-4 cloves minced garlic 1/4 cup pesto 2 tbsp mayonnaise Salt & Pepper (to taste) 1. Pasta, cooked Handful of Arugula Cherry Tomatoes, sliced Mozzarella Pearls 1 small Red Onion, sliced Green Olives, sliced For the Dressing: 3/4 C. Pesto (Homemade or store-bought) 1/4 C. Reserved pasta water 2 TBS. Mayo 1/2 C. Plain Yogurt or Greek Yogurt Juice of 1 Lemon Salt Cracked Black Pepper 1. Cook pasta according to package directions. Reserve a 1/4 cup of the pasta water to use for the dressing. Drain pasta and rinse in cold water. 2. Combine pasta, tomatoes, arugula, red onions, green olives, and mozzarella cheese pearls in a large salad bowl. 3. Make the dressing by combining the ingredients listed above.

Here’s how to make it: 1 T olive oil (I used @brightland rosemary) 1 yellow onion, diced 6-8 cloves garlic, minced (to taste) 1 t red pepper flakes, to taste 1 t Italian seasoning Salt and pepper, to taste 1 t smoked paprika, to taste (can sub regular) 1 lb grass-fed ground beef 2-3 T tomato paste 3 cups beef broth (I use @kettleandfire ) 1 cup cream 1 lb medium shells 4 oz freshly shredded sharp cheddar cheese (I use @tillamook) Fresh chives, to garnish 1. @eatinghealthytoday on Instagram: "Pasta with Mozzarella and Cherry! 🍝 (via: @natali_poluyanova_) I put cherry and mozzarella inside the pasta, poured tomato sauce with basil, cream and chicken broth (you can just water) so that the pasta was completely covered. I added cottage cheese and mozzarella on top - it doesn’t happen much 😁 Bake for 40 minutes at 180 degrees. It turned out very tasty. You can add separately cooked seafood or meat to the pasta!"
