The perfect snack for the train ride home after a night out in Glasgow in my youth…I used to love a pickled onion on the side so I decided to serve my updated version of this snack with a pickled onion mayo, salt and vinegar heaven! It’s a must try! See my morning roll reel to make your own Scottish rolls at home 🙌🏼🙌🏼 Makes 12 fritters 2 large baking potatoes 80g plain flour 60g corn flour (corn starch) 150ml cold water 1 tsp baking powder 2 tsp malt vinegar Half tsp salt Cut potatoes to approx 5mm thickness, I use a mandolin for consistency. I also don’t bother peeling, there’s no need 👍🏻 Rinse and place into a pan with cold water and a pinch of salt. Bring to boil and simmer for 5 minutes. Carefully remove and steam dry, soaking excess moisture with kitchen towel. Chill. While they are cooling, make your pickled onion mayo. Roughly chop 70g of pickled onions, 1 large sprig of tarragon and mix with 2 tbsp mayo. Put aside till ready. Now make your batter. Sift the flours, baking powder and salt, then gradually whisk in your cold water. Then add your vinegar and combine. Dip your potato slices into seasoned flour, then the batter and drop into hot oil (180c) turn and shoogle the fritters till golden brown and crispy. Then remove to drain on kitchen paper, removing the crispy bits that have fallen off too. Season immediately with salt and I love this vinegar powder* as you get all the flavour and retain all of the crunch! Load up your roll with a couple fritters, a good dollop of pickled onion mayo and finish with an extra sprinkle of crispy bits. Lo puoi usare in qualsiasi piatto salato 🤤.👇🏻Recipe x 8 veils / Ricetta x 8 veli👇🏻🇬🇧 • Ingredients:150 ml water100 ml vinegar (I've used rice vinegar, you can also use apples or white wine vinegar))1 red onion, sliced2.8 gr agar agar👉🏻 Put the sliced red onion in a bowl with water and vinegar. Cover with cling film and let marinade for 24 hours in the fridge . Once done, you will see that the red onion released all the beautiful pink color and the liquid will have an intense onion flavor. Now strain the pickling liquid and keep the onions for salads or use it ad topping anywhere you like. For 200 ml of liquid, add 2.8 gr of agar agar in a pot, mix well and heat up to 90°C. Put the liquid in a tray, remove bubbles with a blow torch and sprinkle the marigold petals on top. Cool down in the fridge for 30 mins then cut the veil with a cutter. All this needs is 5 minutes of prep, some time to soak in the flavors, and you just pop it all in the oven for easy meals all week long. . Here is how to make it: . 1.Start with 2.5 lbs boneless chicken thighs. Trim off any excess fat to the extent you’d like, completely optional. Add it to a large bowl. . 2.Let’s infuse the chicken with a ton of flavor - start by processing 1 medium yellow onion in a food processor. Add it to the chicken. . 3.Add the juice of 1 lemon, 2 heaping tbsp tomato paste, and 2 heaping tbsp greek yogurt. This will really help tenderize the chicken further and add great flavor. . 4.Lastly, the dry spices to bring everything together. Season with 3-4 pinches of salt, fresh cracked pepper, 1 tbsp thyme, 1 tbsp garlic powder, 1 tbsp urfa pepper (or Aleppo pepper or any other chili flakes). . 5. Mix it super well, and ideally let this marinate for 2-6 hours, but even better overnight, but if you want to make it right away, you can. . 6.When you’re ready to make it, preheat your oven to 425F. Remove chicken from the fridge and let it come up to room temp (about 30 mins) before popping in the oven. then pack the marinated chicken tightly into a bread loaf pan (about 8.5x4.5x2.5). Pop it into the oven for 50 mins at 425F. . 7.Remove the chicken from the oven, carefully tilt the pan onto a glass bowl or container to remove the excess juices. Pour the juices over the chicken, then tilt the pan again onto the glass bowl or container to remove the excess juices and set the juices aside. . 8.Flip the chicken onto a cutting board and cut into thin slices or strips. . 9.Serve it up however way you want - as is, on top of a salad, on a power bowl, whatever! This stays well in the fridge in an airtight lid for 4-5 days. . I made a delicious lowcarb high protein chicken bowl with my @kaizenfoodco lowcarb rice and it was SO Good. .
