Well this blueberry and white chocolate cheesecake is exactly one of those. It's no bake. It takes very little effort and most importantly it sets up in the fridge while you get on with anything else. So it makes it an ideal one to make for special occasions because as they say in the infomercials you can set it and forget it and that's exactly what this cheesecake does. It's comprised of a beautiful buttery biscuit base which of course is one of the easiest thing you can do in the dessert world. But the combination of full fat cream cheese, double cream, mascarpone cheese and melted white chocolate sets to this creamy luxurious cheesecake filling that I could literally eat with a spoon before it even goes into the fridge. The beauty of this recipe is that of course you have a classic no baked cheesecake mixture that can be transformed with raspberries or any summer fruit you fancy or even some caramel swirled through. But for me it's the combination of the white chocolate and the blueberries and then that mascarpone cheese that really makes this a spectacular dessert. Now over the years I've made this as a cheesecake as a show stopper dessert but also it's really nice made into a brownie tin and then you can slice it into little squares that you can offer up for some outdoor eating too. Or like here where I've made a very simple blueberry compot and then allowed it to cool before serving it with a simple slice of that creamy cheesecake. Whatever way you choose to serve it, I urge you to save this recipe because it is a show stopper every time.

Dejen er nem og kan varieres, så du helt sikkert kan finde ingredienserne i dit kĂžkken. Du skal bruge: - 3 dl KĂŠrnemĂŠlk, A38, ymer, skyr, ylette, yoghurt eller tilsvarende - 5 dl Koldt vand - 10 g GĂŠr - 100 g Revet frugt eller grĂžntđŸ„• - 4 dl Havregryn (ca. 125 g) - 2 dl Fuldkornshvedemel eller anden fuldkornsmel (kan ogsĂ„ erstattes af 2,5 dl hvedemel, men fuldkorn er godt👊) - 1Âœ tsk groft salt - 500 g Hvedemel (+- juster, dejen skal vĂŠre lidt fast, som I filmen). - 2 dl Blandede kerner og frĂž, fx grĂŠskarkerner, sesamfrĂž eller lign (kan undlades) 1.
