For generations South Africans have been making vetkoek at home. Essentially it’s homemade (or storebought) bread dough that is deep-fried and then stuffed with a variety of fillings. More commonly filled with a curry mince, they are as delicious when served with tuna or chicken mayo, ham and cheese, or even common spreads such as golden syrup, honey, peanut butter, and marmite. Homemade apricot jam is always a winner as well. Basically anything your tastebuds desire. When we stayed at eKasie Backpackers in Khayelitsha, we were served the most divine vetkoek for lunch! We couldn’t rest until we’d got the recipe. So here it is for you to try.
