Makes enough for 5 lunches so Nick and I split them this week!
- 12 oz cheese tortellini (I used barilla that is found in the pasta isle)
- 1 can chickpeas drained and rinsed 
- 1 English cucumber, cut into quarters
- 1 cup cherry tomatoes, halved
- 3/4 cup feta cheese
- 1/2 cup Kalamata olives
- 1/2 red onion, diced

Dressing:
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp minced garlic
- Salt, pepper, oregano, dried dill (measure with your heart, I added a decent amount of each)
- 1 tbsp lemon juice 

1. Cook the cheese tortellini according to the package instructions. Once cooked, drain and set aside to cool.

2.
