This was a fun cook i did back on 12-18-23 and was inspired by my boy @svenddiesel This was one of the cooks i did that i couldn’t voiceover because i was sick. Finally have the lungs to get some editing done. Basically smoked this like the 3-2-1 rib recipe. Before i wrapped the ribs around the pineapple, i rubbed the pineapple down with some @whistlepigwhiskey syrup. First 3 hours was at 225°. Then just wrapped the whole thing in foil with apple juice to get the bone pull for almost 2 hours at 225°. Then removed from foil, sauced with Traeger Sweat and Heat BBQ Sauce and let that tack up for 45 minutes at 275°. These were delicious.
