This brioche dough is enriched with milk, egg, and butter, so using a stand mixer is really helpful since it needs a lot of kneading at the beginning. HOWEVER, this is a very low hydration recipe which produces a very stiff dough. Be careful not to overwork your @kitchenaid. You can mix for a few minutes at a time then give your machine a rest - or knead it by hand. 😉

RECIPE :: makes 12 buns 

500g bread flour 
200g active starter 
150g milk
2 eggs
50g sugar
