Let the bread sit at room temperature for about 6 hours to dry out—if you can do this overnight, even better.

This is so the bread doesn't fall apart into mush when you add all that liquid (more on that later). If you forgot to do this or don't have time, just put the bread in a 325° oven for 20-30 minutes, tossing occasionally until the bread feels a little...well, stale.
