Vacuum seal Lobster meat with butter and sous vide 51C/125F for 45 minutes. Make bisque by searing vegetables, add tomato paste, then add lobster tail skin, deglaze with Brandy, add ice, and cook at low temperatures. After 30 minutes, blend it to puree and filter it with a very thin sifter. When lobster tail is sous vide, sear the tails for 2 minutes on a hot pan with olive oil and set aside. Cook pasta in boiling water, then finish to cook in lobster bisque.
