This is why most recipes give you a time range for cooking time.   But when it comes to bread the temperature in which you bake your Sourdough can affect its overall rise. 👀  Baking sourdough for 20 min at 500° and then lowering the temp for another 15-20 is pretty popular. The thing with baking at such high temperatures, is that the crust will begin to form much faster and can actually inhibit the possible rise. 😩 Yet for other bakers, it can work great! 😊   ✨The best way to know what temp to use, is to experiment a little and take notes.
