Hansel is a miniature eggplant, perfect for small gardens, or for growing in containers. Produces heavy yields of small, deep purple fruit. Last night I sliced up about 5 of these guys, laid them out in a baking dish, drizzled them with olive oil, added seasoning salt, then spinach leaves, a layer of Italian blend cheeses, a layer of sliced tomatoes, more cheese, and more seasoning. Baked the whole thing for 40 minutes, and mmmmmmmm... delicious!
