The recent controversy surrounding chili crisp has motivated me to read about the history of chili peppers in China. Many fascinating facts and here is to share a tip of iceberg of what happened the before Lao Gan Ma. Guizhou, the birthplace of LGM was the first region to use chilis as condiments, where these peppers have undergone a transformation from foreign ingredient to integrated kitchen staples in Chinese cuisine. Of course, this is not to claim that Guizhou is the sole origin of chili crisp or chili oil; undoubtedly, many regions have their variations of this condiment.

This chili crisp recipe is an adaptation of my Sichuan chili oil, with garlic and store bought crunchy ingredient.
