Boil the chopped potatoes along with a bit of salt until they’ve fully softened. Drain and place in a bowl. 2.) Add the corn flour, seasonings, oil and mash until smooth. 3.) Take a tbsp of the mash, flatten in the palm of your hands and make a hole in the middle to place a pinch of grated mozzarella. Carefully mould to form a potato ball, ensuring to cover the cheese with potato mash. Repeat this process with the rest of the mash and cheese.
