Is just so happens that Pineapple is a fantastic companion for all exotic fruits, and makes a delightful match with lime. I played off the classic Pina Colada flavors with this plated dessert, but added a twist of lime to the vibrant notes of pineapple, and the unique caramelised flavour of the Muscovado sugar. Finally I combined this jubilation of tropical fruits with macadamia nuts, to lend a buttery-nutty taste to the final dessert. The “ Limeolada “ plated dessert is also gluten-free!
