Ingredients: 
1/2 lemon 
1 zucchini 
Pasta for two 
2 cups fresh basil 
Handful of parsley and mint (optional) 
1/2 cup frozen peas 
1 clove garlic 
Salt & pepper
1 tbsp olive oil 
Directions: 
Slice the zucchini and fry it in a pan with olive oil until browned. 
In a mortar and pestle (or a blender) add fresh basil, mint and parsley, olive oil, salt and pepper  and blend until it’s a smooth paste. 
Cook and drain the pasta. Then add the zucchini to the pasta along with the peas, pesto paste and a splash of pasta water.
