You know that I use roasted garlic cloves in almost every recipe. They're tasty and don't overpower the dish as raw garlic does. And they're easy to make. I buy bulk pre-peeled garlic to make things easier. I put it in a bread pan, cover with olive oil, salt, and pepper and roast them in the oven. I store it in the refrigerator for up to six months. The best part - I use the leftover olive oil for lots of other recipes - like hummus.
