These mushroom skewers seared in a cast iron skillet are a must-try together with the spicy coconut-peanut sauce! The classic Southeast-Asian satay is grilled meat on a skewer, served with peanut sauce. This vegan version with oyster mushrooms is a wonderful meat-free alternative. My tip is to sear the marinated mushrooms in a cast-iron pan on a medium-low temperature for about 9 minutes on each side. Be patient here, it will be so worth it!
