Mousse dessert plating

Is just so happens that Pineapple is a fantastic companion for all exotic fruits, and makes a delightful match with lime. I played off the classic Pina Colada flavors with this plated dessert, but added a twist of lime to the vibrant notes of pineapple, and the unique caramelised flavour of the Muscovado sugar.
