Easy Kombu Ramen Recipe | The Feedfeed

My version of homemade Instant Ramen loaded with lots of toppings like baby bok choy, carrots, cilantro, kimchi, scallions, radishes, enoki mushrooms, lemons and black sesame. Oh, and can't forget a 6 min egg with an oozy yolk. Ramen broth traditionally takes days, but I like making a homemade version by adding a few things to chicken stock to give it a nice umami flavor like dried kombu.

I first scratched my head when I was asked if my Kimchi was vegan, but if you check ingredients you'll see fish sauce and some fermented fish/shrimp is used. So when #Maangchi came out with her vegan Kimchi I tried it out (I'm not a vegan my daughter is!) and this is SOOO GOOOD! one small sub, instead of using veg stock I use either kelp soaked in water or mushroom.
