As we move into warmer months, I think this is a Good Egg to have on rotation. Silky homemade hummus, a salsa/salad made from trendy gordal olives, guindilla chillies, parsley, olive oil, some fresh tomatoes and cucumber (plus salt), and one or two eggs boiled until ‘fudgy’. Which to me is the 8 minute mark - past runny and jammy, but not quite the chalkyness of fully hard boiled (10 mins).

I used, this time, @clarence_court’s Organic Leghorn Whites. Don’t see fully white shelled eggs very often in the UK, so enjoyed them for that, and the flavoursome yolks as well.

Hummus: 400g good chickpeas, aquafaba that comes with them, about 70g runny tahini, blend, big pinch salt, 100g fridge cold water, blend some more, then juice o Eggs Boiled, Salsa Salad, Homemade Hummus, Stuffed Shells, Hard Boiled, Fresh Tomatoes, How To Make Salad, Tahini, Parsley
