Makes 4 bowls! 

You’ll need: 
Simply Organic Southwest seasoning 
1 lb of chicken breast 
1/2 cup Jasmine rice 
1 cup chicken bone broth 
1 1/3 cup corn 
1/2 cup black beans 
1 cup zucchini slices 
1 yellow onion, chopped 
A bunch of mini peppers, chopped 
1 cup light Mexican blend cheese 
Avocado spray 
Garlic powder 
Salt & pepper 

Each bowl: 
4 oz chicken breast, cubed 
2 tablespoons Jasmine rice (omit for a lower carb option) 
1/4 cup chicken bone broth 
1/3 cup roasted corn (frozen) 
1/8 cup black beans 
1/4 cup zucchini slices 
A handful of sweet peppers 
1/4 cup chopped yellow onion
