Cooking scallops is super easy if you follow these 6 tips below

1. Season scallops and pat dry on paper towel. You want them as dry as possible. A wet scallop will stick to the pan like glue!

2. Make sure the pan is hot enough by testing with the mercury ball water test.

3. Add high smoke point oil and make sure it is hot enough before adding the scallops. Cold oil means the scallops will stick! Make sure it just barely starts smoking, then add the scallops.

4. Don’t overcrowd the pan. Make sure there is space between each scallop. 5 tips for perfect scallops ⬇️

5 steps:

1. Pick larger scallops at the store - larger has more surface area for a better sear and also less likely to overcook

2. Thoroughly pat dry after seasoning and before searing. If there is any moisture it will stick to the pan and won’t get a good sear.

3. Do the mercury ball water test to make sure your stainless steel pan is hot enough. If water dances on top of the surface, it is hot enough to add oil and will essentially be nonstick.

4. Sear on medium high heat on the first side until there is a good crust.
