You can use 1-2 week old discard in “discard recipes”…think cookies, brownies, muffins, non-yeast breads, tortillas (pretty much anything that doesn’t require an active starter (aka wild yeast). I have TONS in my digital cookbook if you need some good recipes. 😘 I definitely would not use the discard in this video though, it would be WAY too sour, because of the hooch (just lactic acid bacteria collecting). So I would either drain the hooch off and feed it, or if I wanted a sourer starter, stir it in and feed it.
