Chris Joe on Instagram: "Crispy Hong Kong style chow mein was one of my absolute favorite dishes growing up and would always be served at chinese banquets and dinners. 

It’s much more complex than your average take-out chow mein, the noodles are pan or deep fried for a crispy exterior while the flavorful gravy topped with meat and vegetables soak into the noodles, giving them a nice contrasting textural balance. Hope you enjoy this one!

2 cup baby bok choy
1 cup oyster mushroom
1/4 cup sliced onion
2 stalks scallion cut into 2" pieces
1/4 sliced carrot
2 cloves garlic, chopped
10 oz fresh chow mein noodles
oil for frying
1 cup chicken stock
2 tsp white pepper
1/2 tsp msg
1 tsp sugar
2 tbsp Shaoxing wine

marinade for your choice of protein (I'm using chicken and shrimp)
