Crème patisserie is one of my favourite things to make and don’t be fooled by its fancy name, it’s not that complex! In fact, I find it relatively simple but it is so versatile.  A crème patisserie is simply a custard thickened with cornflour. Once you have this, it becomes the base for a perfectly light diplomate or a rich and indulgent mousseline.  Ingredients: 250g whole milk
4 large egg yolks
45g caster sugar
30g cornflour
40g unsalted butter
1tsp vanilla
 Optional: 180g cream  Method:  1.To make the crème pat, heat the milk in a saucepan until simmering  2.Meanwhile, whisk together egg yolks, sugar, cornflour & vanilla in a heatproof bowl.
