It’s rice cooked down in a clay pot where the rice absorbs all the juices and flavours from the mushrooms, tofu, and sauce until super tasty and aromatic! This Cantonese-style quick and easy clay pot rice is full of flavor and comes together in only 30 minutes! I start by soaking jasmine rice and dried shiitake mushrooms overnight. Brush oil on the bottom of your clay pot and add the drained rice. Pour the mushroom water in and you want to add enough just so that it is slightly above the rice. Cover and let that cook over medium heat and once the rice is semi-cooked, add sliced Chinese sausage, shiitake mushrooms, and let that cook for a few minutes. Drizzle sesame oil over the lid. After a few minutes, add Gai Lan and an egg and let it cook for a few more minutes.
