Sophie Waplington on Instagram: "PUTTANESCA BUTTERBEANS with CRISPY QUINOA follow @sophsplantkitchen for more recipes 🌱🫶  Healthy, tasty, takes max 30 min to throw together 💚  INGREDIENTS   4 garlic cloves, minced 1 courgette, cut into half moons  60g chopped olives, any  3 large salad tomatoes, grated  3 tbsp capers + 1 tbsp of their water/brine 2 tbsp tomato purée  660g butterbeans, I used @boldbeanco (and the bean water)  Olive oil, salt, pepper 150g quinoa   METHOD   🌱 sauté the courgette in a good glug of olive oil for 5 mins with a sprinkle of salt, then add garlic and cook until fragrant.  🌱 add the tomato purée, olives, capers and a tbsp of their brine. Coat the mixture and sweat down for a few mins, before adding the beans and their water, and the grated tomatoes. Rachel on Instagram: "Rich and Smokey Butterbeans with a Creamy Celeriac Miso Purée 🧡 A delicious and comforting dish for you to try when it’s one of those cold and grey days, and you just need some warmth and comfort 🫂 RECIPE Beans: to a pan heat some oil over medium heat. Add in 3 cloves minced garlic and 1/2 diced onion. Sauté until fragrant and onion becomes translucent. Add 1 tbsp tomato purée and stir. Add in 1 tsp fennel seeds, 1 tsp smoked paprika, 1 tsp vegan chicken seasoning (I use @justspices_uk ) 1 tsp smoked chilli powder (I use @spicemountainuk ) and 1 1/2 tbsp dark soy sauce and stir. Allow to cook on low heat for 30 seconds. Pull apart the king oyster mushrooms (I used about 5) and add them to the pan. Cook until they begin to become tender then add in butterbeans. Introducing CREAMY HARISSA BUTTERBEAN BRUSCHETTA - basically homemade beans on toast, but done in 20 minutes and PACKED full of flavour. 

We’ve got onion, garlic, harissa, tomato puree, smoked paprika, oregano, miso paste + white wine to infuse these delicious queen butter beans (from @boldbeanco 🔥)

We’ve got crispy golden sourdough toast rubbed with garlic, with beautiful fresh chives on top.
