Ingredients for BIGA:

	•	500g Flour Type 00 (protein 11-13%)
	•	250ml Water
	•	1g Instant dry Yeast

Ingredients for Main Dough:

	•	BIGA (from above)
	•	100ml Ice Cold Water
	•	12g Salt

Preparation:
	1.	BIGA:
	•	In a container, mix 250ml of cold water with 1g of instant dry yeast until fully dissolved.
	•	Add 500g of flour and shake until well incorporated.
	•	Transfer to the fridge and let the BIGA rest for 20-24 hours.
	2.	Dough Development:
	•	Remove the BIGA from the fridge, add 100ml of ice-cold water, and 12g of salt towards the end.
	•	Start mixing with a flat beater for 3 minutes or by hand, then switch to a dough hook for the next 7 minutes.
