Criollo Grindz on Instagram: "Pernil 🇵🇷 🍴Start by placing the pernil on a tray and wash with water and lemon juice. Dry completely. 🍴 After drying, generously add salt over the entire cuero. Place in the refrigerator and let it rest for 24 hours or at least 3-6 hours. Remove from the refrigerator and remove all the salt. Dry once more. 🍴Start carefully separating the cuero from the meat with a sharp knife. Don’t remove the cuero completely, cut off only 75 percent of the top layer so it doesn’t come off. 🍴 With a knife, make several holes throughout the meat. Do not punch holes through the cuero. 🍴Add 8-10 cloves of garlic to a pilón, followed by 2-3 tablespoons of oil, 2 teaspoons of salt, 1/2 teaspoon of black pepper. Mix it all together. Generously add the mixture into each hol
