Avoid self-rising flour. Steps: 1. In a bowl, thoroughly mix melted butter, sugar, eggs, milk, cake flour, and vanilla extract. Sift twice. 2. Heat a nonstick pan on low. Pour a cup of batter, spread it evenly by moving the pan, and cook for about 1 minute. Repeat until batter is used. Cool crepes on a rack. 3. While crepes cool, beat heavy cream and sugar until stiff peaks form.
