My no. 1 hack for turning an average recipe into an amazing one is browning the butter. ☀️

Part of becoming an amazing cook, is knowing how and when you can take a standard ingredient and add a technique that I make the recipe even BETTER. 

Browning butter is one of my favorite techniques to make on a regular recipe even better, and it adds such an awesome caramel flavor that can be used to compliment sweet or savory recipes (brown butter + Sage gnocchi 😍)

If you are baking, just make sure you compensate for the water content lost (about 1 1/2 tbl)

Sometimes I want a hot pudding but nothing heavy. This is perfect, it has a light, almost souffléd, top and a creamy, lemony custard underneath. It is a recipe, modified from the Edmonds cookbook, by my friend Alexa who is one of the best cooks I know!

2 vanilla beans
65g honey
75g sugar
65g cornstarch
190g whipping cream
150g egg yolks
1/2 tsp. salt
37g unsalted butter

1 sheet puff pastry

1. Grease a 18cm x 6cm ring mold with some soft butter and sprinkle with sugar. 
2. Line the ring with puff pastry rolled to about 4mm thick. Place in the freezer for at least 2 hours.
